Andouille sausage & Shrimp stir fry

Ingredients:

  • 2 Andouille sausage 

  • 8 shrimp 

  • 1/2 cup Peppers

  • 1/2 cup Broccoli

  • 1/4 cup Onions 

  • 2 tsp Garlic

  • 2 Tbsp Cajun seasoning 

  • 1 cup Long grain rice

  • 1.5 cup water

  • Salt

  • 2 Tbsp oil 

  • Stir fry sauce

  • 1/2 cup soy sauce

  • 1/2 cup vegetable oil 

  • 1 tsp sesame oil

  • 2 tsp rice vinegar 

  • 2 cloves garlic

  • 1-2 tsp ginger 

  • 1 Tbsp sugar

  • 1 Tbsp corn starch 

  • Pinch of chili flakes (optional)

Instructions:

  1. In a bowl, combine all ingredients and whisk until combined.

  2. To prep the ingredients, first cut the Andouille into 1/4 inch size pieces. Hopefully your shrimp are already peeled and deveined, but if not, get them cleaned up and then rinse under cold water. Leave the tail on the shrimp. Julienne the peppers & onions. Blanch and shock the broccoli. 

  3. Bring rice to a simmer on med/high. Bring down to a simmer and cover the rice. Cook for 15 minutes. Rest for 10 minutes or until rice is cooked.

  4. Turn the flame to medium/ high. When the pan is hot add 2 tbsp of oil. When oil is hot add Andouille sausage. Allow sausage to carmelize a bit. Add onions and peppers and continue to cook at high flame. Add broccoli, then garlic and finish with stir fry sauce. Cook for 30 seconds then serve over long grain rice.
